2 lb (32 oz) white bark
12 oz semi-sweet chocolate chips
24 oz salted cocktail peanuts
To Make It:
Put chocolate chips and white bark into a large (2 quart) glass measuring cup or microwave-safe bowl. Heat on high in microwave for one minute. Remove from microwave and stir with a cooking spoon. They will very likely NOT be completely melted. Heat for 30 seconds more on high in microwave. Remove, stir. Repeat until melted.
*DO NOT OVERHEAT! The reason for heating the chocolate/bark mix in 30-second increments is because it is relatively easy to overheat the mix in the microwave. If it overheats, you end up with flat clusters that take forever to harden.
Dump salted peanuts into chocolate/bark mixture. Stir with cooking spoon until thoroughly coated.
Lay strips of wax paper on clean, dry counter top. Scoop chocolate/bark/peanut mixture onto a small spoon and place it on the wax paper. Adjust the size of the cluster to your liking and continue. The candy should be hardening by the time you are finished scooping it out of the bowl/measuring cup.
Ready to serve after it is completely hard. Makes 8 dozen small clusters.
