4 Roma tomatoes
Leaf lettuce, optional
16 slices whole wheat or white sandwich bread
To Make It:
Wash and peel the cucumbers. Cut them into thin slices.
Put paper towels or a dish towel on the counter and put cooling racks on them. Wash the tomatoes and cut them into thin slices. Put the tomato slices on the cooling racks so that some of the juice can drain out.
Wash and pat dry a few lettuce leaves. Tear them into pieces about the same size or slightly larger than the bread quarters.
Cut the crusts off the bread. Cut the slices into quarters. Put a good dollop of Cucumber Spread on each quarter. Put either a cucumber or a tomato on half the slices. If desired, add a lettuce leaf. Cover with another slice to make little sandwiches. Put a colorful toothpick through it.
Makes 32 sandwich quarters.
