½ cup tahini
2 large cloves garlic
2 Tbsp extra-virgin olive oil
½ tsp salt
Juice from 2 small lemons, divided
To Make It:
Put the tahini, garlic cloves, olive oil, salt and juice from one lemon into a mini food processor. Process until smooth. Taste. If desired, add juice from ½ of second lemon. Process a few seconds until blended. If desired, add juice from the second half of the second lemon. Process.
If the sauce is too thick, add a teaspoon of warm water and process again.
This sauce refrigerates well. Put it in a glass jar with a tight-fitting lid.
