3 medium sweet potatoes (yams)
2 to 4 Tbsp butter, margarine or vegan spread (be sure it is one that melts well)
1 to 2 Tbsp light brown sugar
1 tsp cinnamon
To Make It:
Preheat oven to 375°F. Grease a 2- to 2-1/2 quart casserole dish. Make sure it is one that has a cover.
Peel sweet potatoes. Cut them into approximately 1/3” thick slices. Put a layer of sweet potato slices on the bottom of the casserole dish. Put a small dab of butter or margarine on each slice. Overlap another layer on top of them, and put a small dab of butter or margarine on each slice. Sprinkle brown sugar onto the slices, then sprinkle cinnamon on top of that. Repeat. You will end up with 4 layers. If you have more room in the casserole dish (and more sweet potatoes), put more layer(s), butter, sugar and cinnamon.
Cover and bake for 30 minutes. Check for doneness by poking one of the slices with a fork. They are done when they are tender. If not tender, then bake for up to 15 minutes more. NOTE that the more potatoes you have in the dish, the longer you will need to bake them.
Remove from oven and serve. Be sure to use a large spoon so that you can spoon some of the melted butter and sugar mixture over them.
