Just as you wouldn't ask the vegetarian in your life to eat meat, don’t change everything you typically do in the kitchen just for the sake of one person. Below are menus for scrumptious meals that will suit carnivores, omnivores and vegetarians alike. They start with meat, fish or fowl that you are cooking already, then provide the framework for feeding your vegetarian too.

She then cooled it, deboned it, added it back to the chicken stock and, finally, made and added dumplings, which then cooked for another 45 minutes. The whole process took several hours. Since she was a working mom, we didn’t have it very often, so it was always a treat. After going vegetarian, I missed this comfort food. Eventually I came up with this recipe using seitan as a chicken substitute. I think of my mom every time I make it.

My husband requested I come up with a recipe for vegetarian gumbo. I am so glad he did—this is delicious! I think of our Creole neighbors in Louisiana every time I make it. If you want meat, boil sausage links in a separate pan. Those who want it can cut it into thin slices and add it to their bowl. End with this seriously good Berry Crisp.

I bought three little pumpkins, cleaned and drew Jack-O-Lantern faces one them since we aren’t eating the rind anyway, then put different stuffings in each. I am including all of the recipes here. If you like, you can easily use real meat instead of meat replacer, or even add meat to the vegetable stuffing. Be sure to put the vegetarian and meat pumpkins in separate baking dishes so that the juices, if any, don’t mix.

“Ragout” refers to a main dish stew. This Mushroom Ragout with rice is a hearty main dish for a vegetarian, plus goes very well as a side dish with steak for your omnivore sweetheart.
